I've been loving this cozy winter soup recipe so much these lost few cold weeks. It really warms the soul. It's the 'Smokey Sweet Potato Soup' from Alyce Alexandra's 'Quick Dinners in the Thermomix' cookbook and, true to its name, it is quick!
If you don't use a Thermomix, each method can be altered to suit.
The only 2 things I tend to change in this recipe are 1. Instead of chicken stock I add in water plus the veggie concentrate and 2. I tend to skip the cream.
So, a photo of the recipe is below but hard to see, so here goes!
1 Brown Onion, peeled and halved
30g Olive Oil
800g Sweet Potato, peeled and roughly chopped
500g Chicken Stock
1 Tbsp Stock Concentrate
2 tsp Smoked Paprika
Blue Cheese, to serve
Pine Nuts, toasted, to serve
1. Place Onion in the TM Bowl, shop for 5 seconds, speed 5. Scrape down sides.
2. Add Oil, saute for 4 minutes, Varoma temperature, speed 1.
3. Add sweet potato, stock, stock concentrate and smoked paprika, cook for 16 minutes, 100 degrees celsius, speed 2.
4. Add cream, puree for 45 seconds, slowly increasing from speed 1 to 9.
Pour soup into 4 bowls and serve topped with blue cheese and pine nuts. (Or don't, that's way too much effort)
